

Cabbage roll casserole

Quick, easy, and delicious weeknight meal packed full of healthy protein, fiber and fats.

Ingredients

1lb ground meat of choice (I use beef)

1 small onion
-
½ medium cabbage
-
½ tbsp garlic powder
-
1 tbsp Italian seasoning
-
1 jar marinara sauce of choice
-
1 cup cheese (I use a blend of mozzarella and Parmesan)
Directions
In a large pot or pan (I use a 5qt Dutch oven), brown your meat over medium heat
While that is browning, chop onion and add to meat to sauté
Once your onion is soft, season your meat with the garlic powder and Italian seasoning
Chop cabbage and add to your meat mixture, cover and cook until desired doneness of cabbage. Usually about 15 mins
While your cabbage is cooking down, preheat your oven to 400 degrees Fahrenheit
Spread 3 or 4 tablespoons of marinara sauce in the bottom of a 9x13 casserole dish
Once your meat and cabbage mixture is cooked thoroughly, add remaining marinara sauce and mix. Transfer to casserole dish
Add cheese to the top of your casserole and bake until cheese is melted. About 15 minutes
Remove from oven and serve with a slice of garlic bread

Recipe Note
You can add rice before baking like a traditional cabbage roll if desired.
